this week's meal idea 🔪
🌮 pepita mole tofu tacos with Mexican street corn and shredded red cabbage.
about a year ago, I made a pepita mole style sauce with chicken thighs. this time, I thought I'd try shredded or crumbled tofu.
🍋Here's my plan:
1. make the mole.
(search: lime chicken thighs with pepita mole on mandyolive.com for the recipe)
2. shred or crumble extra firm tofu. toss with a basic seasoning salt or taco seasoning, then with a few spoonfuls of mole, just enough to coat.
3. spread onto a greased baking sheet and bake at 350⁰F for ~30 mins.
4. once the tofu is crisp on the outside, toss with a bit more mole to make it saucier.
5. serve with flour tortillas and top with, shredded red cabbage and Mexican street corn (Alexia, tattooed chef or trader Joe's brand. whatever premade brand I can find)
❄️ I plan on freezing the extra sauce to have it in hand.
