Vietnamese Braised Pork Belly with Eggs
Ingredients
2 lb pork belly
Boiled quail eggs or boiled chicken eggs
3 tbsp oyster sauce
2 tbsp fish sauce
1 tsp salt
1 tbsp sugar
2 tbsp minced garlic
0.5 tsp black pepper
0.5 tsp five-spice powder ( optional)
3 cups water or coconut water
Caramel: 2 tbsp sugar + a little oil ( or use 1tsp paprika )
***note( if use coconut water reduce sugar in the marinate)
-Cut pork belly into small pieces. Boil for 1-2 minutes, then rinse well.
-Marinate pork with oyster sauce, fish sauce, salt, sugar, 1 tbsp minced garlic, blackpepper, and five-spice ( optional ) for 10–15 minutes.
-Heat 2 tbsp sugar with a little oil until deep amber. Add the remaining 1 tbsp garlic and QUICKLY stir, then immediately add the marinate pork. Stirfry for 5–10 minutes.
-Add 3 cups water or coconut water, cover, and simmer over medium-low heat. After 10–15 minutes, remove the lid and add the boild eggs.
-Continue simmering w/out the lid until the pork is tender and the sauce reduces. TASTE AND ADJUST with a little more fish sauce if needed. #porkbelly #braisedpork #vietnamesefood
