Chicken & Veggie Bowl Recipe

Ingredients:

• White rice (I used 1/4cup)

• Carrots, shredded

• Cucumber, chopped

• Lettuce or salad mix

• Chicken, grilled or fried (I used pre-cooked, frozen chicken)

• Yum Yum sauce

• Siracha

Additional tips/notes: Instead of Yum Yum sauce, you could mix Siracha with mayonnaise for a spicy mayo! You can also swap out the chicken with a different protein, like tofu or imitation crab. Additionally, I love adding avocado, but I didn’t have any to use today!

... Read moreI absolutely adore making these simple yet satisfying chicken and veggie bowls for a quick lunch or a light dinner. What I love most about this recipe is how incredibly versatile and healthy it is! When I’m looking for a truly 'clean eating' option, I always opt for grilled chicken. It's super easy to grill a batch at the beginning of the week, whether on an indoor grill pan or an outdoor BBQ, and then chop it up to add to my bowls throughout the week. This makes assembly a breeze, especially on busy nights! The beauty of this bowl lies in its fresh ingredients. White rice forms a comforting base, but sometimes I swap it for quinoa or even cauliflower rice if I’m trying to cut down on carbs. And those crisp, shredded carrots and cool, chopped cucumber aren’t just pretty; they add such a refreshing crunch and a boost of vitamins. If you're wondering about making it even healthier, don't be shy with the lettuce or salad mix – the more greens, the better! I often throw in some spinach or kale for an extra nutrient punch. Let's talk sauces! While I love the classic creamy Yum Yum sauce – I often use the BIBIBOP Asian Grill Yum Yum for that authentic flavor – sometimes I crave a little kick. My secret for a 'spicy mayo' that's even better than store-bought is just mixing Sriracha Hot Chili Sauce with a dollop of mayonnaise. It’s so simple and adds a fantastic zing that really elevates the whole bowl. If you like a lot of heat, go heavy on the Sriracha! And remember, controlling the amount of sauce is key to keeping the bowl on the healthier side. Don't have chicken or want to switch things up? This bowl is your canvas! Tofu, shrimp, or even some imitation crab are fantastic alternatives. I once used leftover salmon, and it was delicious. And for those days when you have extra time, try roasting some broccoli or bell peppers to add a warm, savory element. I mentioned in my original post that I love adding avocado, and seriously, a few slices of creamy avocado take this bowl to the next level of satisfaction and healthy fats. This recipe truly embodies a 'healthy chicken veggie bowl aesthetic' that’s also incredibly practical. It's proof that clean eating doesn't have to be complicated or boring. Whether you're meal prepping for the week ahead or just need a 'healthy chicken veggie bowl simple' dinner in under 30 minutes, this bowl has got you covered. Enjoy experimenting with your favorite ingredients to make it your own!
