I used to buy pre-made fajita seasoning packets all the time, but honestly, making my own has been a total game-changer for both flavor and my wallet! It’s so simple to whip up, and you get to control exactly what goes in – no weird anti-caking agents or excessive sodium. For these incredible sheet pan steak fajitas, I always rely on a specific blend that truly makes the steak and veggies sing. My go-to homemade fajita seasoning starts with a generous base of cumin and chili powder. Cumin brings that essential earthy, warm flavor that's characteristic of Mexican and Tex-Mex cuisine, while chili powder adds depth and a mild, smoky heat. I then add a good amount of paprika – not just for color, although it does make everything look so vibrant – but also for its sweet, slightly peppery notes. For a little kick, a dash of cayenne pepper is a must for me. You can easily adjust this to your liking; if you prefer less heat, just use a tiny pinch or skip it altogether! Of course, salt and freshly cracked black pepper are crucial for bringing all the flavors together. Now, here's my secret ingredient that really elevates the seasoning: a tiny pinch of sugar. It sounds unusual, but it works wonders! That little bit of sugar helps to balance out the savory and spicy notes, and it also aids in caramelization, giving your steak and peppers a beautiful, slightly charred finish in the oven. Trust me on this one – it makes a difference! Making a bigger batch of this seasoning blend is super convenient. I usually mix all the dry spices in a small jar, seal it tight, and store it in my pantry. That way, it's ready to go for my next fajita night, whether I'm making steak, chicken, shrimp, or even just roasted vegetables. It’s not just for fajitas, either! I sprinkle it on scrambled eggs, roasted potatoes, or even mix it into ground meat for tacos. It’s such a versatile blend to have on hand. When I'm prepping these sheet pan steak fajitas, I make sure to really coat the thinly sliced flank steak, bell peppers, and onions with the olive oil and generous amounts of this seasoning. The key is to massage it in gently, ensuring every piece gets covered. This allows the flavors to truly penetrate, giving you that authentic fajita taste with every bite. The OCR mentioned perfectly seasoned steak, and this homemade mix is how I achieve it every time! Plus, knowing exactly what's in my seasoning helps me stick to my healthy eating goals, especially when I swap sour cream for Greek yogurt and use Monkfruit as suggested in the original recipe. It’s all about those small, delicious choices!
