🌿🍋 Spring Garden Veggie Bake

Zucchini • Carrots • Herbs • Lemon Zest

A rustic, oven‑baked dish layered with fresh spring vegetables and herbs. Cozy, colorful, and golden — perfect for a warm moment in your Spring Ritual Series.

Ingredients:

• 1 zucchini, sliced

• 1 yellow squash, sliced

• 2 large carrots, sliced

• 1 cup cherry tomatoes, halved

• 2 cloves garlic, minced

• 2 tbsp olive oil

• 1 tsp Italian seasoning

• 1 tsp lemon zest

• Salt & pepper to taste

• 2 tbsp grated Parmesan

• Fresh parsley & thyme

1. Preheat oven to 375°F (190°C).

2. Layer sliced zucchini, squash, carrots & tomatoes in a baking dish.

3. Drizzle with olive oil, add garlic, Italian seasoning & lemon zest.

4. Season with salt & pepper, then sprinkle with Parmesan.

5. Bake for 25–30 minutes until tender and golden.

6. Garnish with fresh parsley & thyme. Serve warm.
