10-Minute Mediterranean Tuna Salad (40g Protein)

This Mediterranean tuna salad is my answer to summer lunches when it’s too hot to cook. It takes 10 minutes, requires absolutely no stove, and packs about 40 grams of protein per serving. 🥗

The chickpeas and fresh vegetables make it filling, while lemon, red wine vinegar, oregano and fresh herbs give it that bright Mediterranean flavor. I add cottage cheese at the end for an easy protein boost—it’s unexpectedly good here!

Mediterranean Tuna Salad — Serves 2

Ingredients:

5–6 ounces canned chunk-light tuna

½ English cucumber, chopped

1 cup halved cherry tomatoes

¼ cup chopped red onion

¼ cup chopped Kalamata olives

1 cup cooked garbanzo beans

2 Tablespoons olive oil

1 Tablespoon red wine vinegar

1½ teaspoons lemon juice

½ teaspoon dried oregano

2 Tablespoons chopped parsley and/or mint, optional

Salt and freshly cracked pepper

1 cup low-fat cottage cheese

Add the tuna, cucumber, tomatoes, onion, olives and garbanzo beans to a bowl. Pour in the olive oil, vinegar and lemon juice, then add the oregano, fresh herbs, salt and pepper. Toss gently to combine.

Divide between two bowls or meal-prep containers and top each serving with ½ cup cottage cheese.

Serve it over greens, tuck it into pita bread, scoop it up with crackers—or just eat it straight from the bowl. Save this for the next day it’s way too hot to turn on the stove!
