To prepare the dish, start with 1 lb of penne pasta, which you will cook in a large pot according to package instructions. Meanwhile, in a large skillet, heat 2 tablespoons of olive oil over medium heat. Sauté 1/2 diced medium yellow onion and a couple of cloves of garlic until the onion is soft and translucent, about 5 minutes. Next, add 1/4 teaspoon of crushed red pepper flakes for a bit of heat, and let it cook for an additional minute. Stir in 2 tablespoons of tomato paste and cook it for a few minutes until it darkens slightly and becomes sticky. To deglaze the pan, add about 60ml of pasta water, and then reduce the heat to low before pouring in 1 cup of heavy cream. Mix everything well. After draining the pasta, add it to the skillet, tossing it to coat with the sauce. Adjust the sauce consistency with reserved pasta water as needed. Finally, add grated parmesan cheese for a rich, creamy finish, and garnish with fresh basil before serving. This simple yet delicious recipe is perfect for a comforting weeknight dinner or an impressive meal for guests.
