When I first tried making My Welas Chili Beans, I was amazed by how the blend of simple ingredients turned into such a rich and satisfying dish. The key to this recipe’s unique flavor lies in the homemade guajillo chili sauce. Soaking dried guajillo chiles and blending them with garlic, tomato, and onion creates a smoky, slightly sweet sauce that complements the hearty beans and meat perfectly. Adding coffee grounds might sound unusual, but it adds a depth of flavor that balances the acidity of the tomato and the heat from the spices. I recommend getting fresh coffee grounds for the best aroma. The combination of soy sauce and Worcestershire sauce also elevates the umami profile, making each bite deeply savory. When cooking, allowing the chili to simmer with the bay leaf for at least 10 minutes is essential to meld all the flavors together. I usually let it cook a bit longer on low heat for an even richer taste. This chili is incredibly versatile—you can top it with shredded cheese, sour cream, or chopped green onions, or even serve it over rice or with cornbread for a comforting meal. I also love to add extra diced zucchini and bell peppers for added texture and freshness. Using 95% lean ground beef keeps the dish hearty without being too greasy. This recipe has become a favorite in my household for cozy dinners, especially during colder months. Trying out My Welas Chili Beans is a great way to experience a fusion of traditional chili ingredients with a delicious twist.
