I try to keep weeknight dinners fairly simple because I don’t feel like cooking a big meal after a ten hour shift. Thankfully I have a kid who will eat just about anything!

I made a batch of chicken schnitzel over the weekend because it’s super easy to reheat and use in multiple meals throughout the week. Tonight we did pita sandwiches with chicken, cheese, & pesto. My son is a fiend for pickles so I also threw some of those on his plate, along with some strawberries for dessert. Overall I think this one was a win!
