Finding truly satisfying, low-carb meals after bariatric surgery can be a journey. For me, French toast was always a comfort food, and I was determined to find a way to enjoy it without derailing my progress. Two years post-op, I've nailed this recipe, and it's become a family favorite – even for those not on a low-carb path! The secret weapon here is really good keto-friendly bread. I personally love using Sara Lee Delightful bread, as my image notes show – it's light, has great texture, and keeps the carbs super low. Using two slices, which usually come out to about 90 calories each, is perfect for a satisfying portion without overdoing it. If Sara Lee isn't available, any high-fiber, low-carb bread will do the trick. For the egg mixture, I often opt for egg whites or an egg substitute to keep things leaner and boost protein, but scrambling two whole eggs works perfectly too if you prefer a richer flavor. This ensures a good protein base without unnecessary excess fat, which is often a key consideration post-op. And for sweetness? Zero sugar syrup is a must! There are so many great brands out there now that taste fantastic. A sprinkle of cinnamon (which I always add for extra flavor!) and a few zero sugar chocolate chips can elevate it from good to absolutely divine. One of the biggest lessons I've learned post-op is the importance of protein. While this French toast has a decent amount of protein on its own (around 11g for my portion), I always recommend pairing it with an additional source. As mentioned in my tips, adding some turkey or chicken sausage on the side makes it a complete, power-packed breakfast that keeps you full for hours and supports muscle maintenance. Remember to adjust your serving size to what you need and where you are in your journey. We're all different, and listening to your body is key. The rough macros I shared (Calories:~110, Net Carbs:~2-3g, Fat:~4-5g) are a great guide for staying on track! When preparing, I find cutting the bread into cubes before soaking helps it absorb the egg mixture evenly. Just throw them into a bowl to easily combine. Cook on the stove top like normal until golden brown on all sides. Don't rush it! To avoid soggy French toast, make sure your pan is preheated to medium heat and don't overcrowd it. Cook in batches if necessary, allowing each piece to get that perfect crispy exterior and fluffy interior. This recipe is also great for meal prepping! You can make a larger batch on the weekend and store individual portions in the fridge for quick, convenient breakfasts during the week. Just reheat gently in the microwave or a toaster oven. Feel free to experiment with toppings too! Beyond cinnamon, a few fresh low-carb berries like raspberries or a dollop of sugar-free whipped cream can be delightful additions. It’s all about finding delicious ways to fuel your body that align with your health goals.
