Sunday’s Dinner 🍽️
This was SO good!!!! I put it in the crockpot & let it cook while I was at church ✨
flank steak
¼ cup cornstarch
2 tablespoons olive oil
1 teaspoon garlic, minced
¾ cup soy sauce
¾ cup water
¾ cup brown sugar
1 cup carrots, grated
green onions and sesame seeds, for garnish (I did not use green onions)
I've tried making Mongolian beef in different ways, but using a crockpot truly elevates the dish's flavor and convenience. Preparing the flank steak with cornstarch helps create that perfect, slightly crispy texture once the sauce thickens. What I love most about this recipe is how hands-off it is—you can throw all the ingredients into the crockpot before you leave and come back to a tender, flavorful meal. Including grated carrots adds a subtle sweetness and some extra nutrition, balancing out the rich sauce. Although green onions are traditional for garnish, I sometimes skip them for simplicity or substitute with fresh herbs like cilantro to add freshness. Pairing the beef and broccoli with brown rice completes the dish with wholesome grains, making it hearty and satisfying. This recipe is perfect for anyone with a busy schedule who still wants to enjoy a home-cooked meal without much fuss. Plus, the combination of soy sauce, brown sugar, and garlic creates a rich umami flavor that’s comforting yet exciting to the palate. If you’re interested in making it even healthier, you can reduce the brown sugar slightly or add extra vegetables like bell peppers or snap peas. Overall, this slow cooker Mongolian beef is a fantastic go-to recipe that I highly recommend for Sunday dinners or meal prep throughout the week.
