The Fuji no Shiro matcha from Nakamura Tokichi is classified as the beginning of the ceremonial grade matcha, the white snow-covered Fuji volcano.
Tone and taste
• Scent: Light fragrances, fresh foliage and slightly kelp.
• Touch Flavor: Silky, creamy, not astringent bitter, classified as quite mellow.
• Notable notes: There is a modest tone of nuts and mild umami, followed by a clear tip-of-the-tongue sweet.
• Balance: Well done on both Usucha and Koicha, even not as dense as the top.
