RIGATONI WITH RICH MEAT SAUCE
Ingredients
• Olive oil
• 1 lb ground beef (or beef + pork)
• 1 small onion, finely diced
• 1 carrot, finely grated
• 1 celery stalk, finely diced (optional)
• 3–4 cloves garlic, minced
• 2 tbsp tomato paste
• Dried oregano or Italian seasoning
• Chili flakes (optional)
• 1 cup red wine or beef broth
• 1 large can crushed tomatoes
• Salt & black pepper
• Butter or a splash of cream (to finish)
• Rigatoni
• Parmesan, to serve
Method
1. Brown the meat well in olive oil until deeply caramelized.
2. Add onion, carrot, and celery. Cook until soft and fragrant.
3. Stir in garlic and tomato paste; cook until rich and darkened.
4. Add herbs and chili flakes. Deglaze with wine or broth.
5. Add tomatoes, season, and simmer gently 45–60 minutes until thick.
6. Finish with butter or cream. Toss with rigatoni and top with Parmesan.
SOFT HOMEMADE WHITE BUNS
Ingredients
• ¾ cup warm milk
• 2¼ tsp active dry yeast
• 2 tbsp sugar
• 3 tbsp melted butter (plus more for brushing)
• 1 egg
• 2½–3 cups all-purpose flour
• 1 tsp salt
Method
1. Mix warm milk, sugar, and yeast. Let foam.
2. Add butter, egg, salt, and flour. Mix into a soft dough.
3. Knead until smooth. Let rise until doubled.
4. Shape into buns and rise again.
5. Bake at 375°F (190°C) for 15–18 minutes until golden.
6. Brush with butter while warm.
