Italian focaccia, Greek lemony yogurt sauce, simple ingredients, shared at the table.

🇮🇹➡️🇬🇷 Focaccia Chicken Sandwich with Lemony Yogurt Sauce
Soft olive-oil focaccia layered with Greek-inspired chicken and a bright lemony yogurt sauce. Cozy, Mediterranean-leaning, and meant to be shared.

Olive Oil Focaccia (no-knead)
• 500 g all-purpose or bread flour
• 10 g salt (2 tsp)
• 7 g instant yeast (2¼ tsp)
• 400 ml warm water
• 40–60 ml olive oil (plus more for pan & topping)
Mix until shaggy, rest 10 minutes, then do 2–3 stretch-and-folds spaced 30 minutes apart.
Let rise until doubled. Transfer to a well-oiled baking dish, dimple generously, drizzle with olive oil, and bake at 425°F (220°C) until golden. Finish with flaky salt while hot.

Greek-Inspired Chicken
• 1½ lb chicken (breast or thighs)
• 2 tbsp olive oil
• Zest of 1 lemon
• 2 tbsp lemon juice
• 3 cloves garlic, grated
• 1 tsp dried oregano
• 1 tsp paprika
• ½ tsp chili flakes (or to taste)
• 1 tsp salt
• ½ tsp black pepper
Marinate at least 30 minutes (up to overnight).
Sear in a hot pan until deeply golden and cooked through.

Lemony Yogurt Sauce
• ⅓ cup full-fat Greek yogurt
• 2 tbsp mayo
• Zest of ½ lemon
• 1–2 tsp lemon juice
• 1 small clove garlic, grated
• ¼ tsp dried oregano
• Salt & black pepper, to taste
Whisk until smooth and creamy. Chill briefly if time allows.

To Assemble
Slice focaccia, spread yogurt sauce generously, add chicken, arugula, tomato slices, and thin red onion. Press lightly and enjoy.
