Greek-Style Lamb Chops (Lemon, Garlic & Oregano)
Ingredients (serves 4)
• 8 lamb chops (rib or loin)
• 3 tbsp olive oil
• Zest + juice of 1 lemon
• 3 cloves garlic, grated or finely minced
• 1½ tsp dried oregano (or 1 tbsp fresh, finely chopped)
• ½ tsp dried thyme (optional but very Greek)
• Salt & freshly cracked black pepper
• Optional finish: crumbled feta, fresh oregano or parsley
Marinate (minimum 30 min, up to overnight)
Mix olive oil, lemon zest, lemon juice, garlic, oregano, thyme, salt & pepper.
Coat lamb well. Let sit at room temp for 30 minutes before cooking.
Greek lamb should smell lemony and herbaceous, not acidic, don’t overdo the lemon.
Cook (Pan or Grill)
Pan method (great for tomorrow night):
1. Pat excess marinade off lamb (important for browning).
2. Heat a heavy pan over medium-high heat with a drizzle of olive oil.
3. Sear lamb 2½–3 minutes per side until golden and caramelized.
4. Lower heat slightly and cook another 30–60 seconds per side if needed.
Target doneness
• Medium-rare: 130–135°F
• Medium: 140–145°F
Rest 5 minutes.
Crispy Peeled Yellow Potatoes (Restaurant-Style)
Serves: 4
Total time: ~40 minutes
Ingredients
• 2 lb yellow potatoes (Yukon Gold), peeled
• 2–3 tbsp olive oil
• 1 tsp kosher salt (plus more to finish)
• ½ tsp black pepper
• 1 tsp dried oregano (optional but great with lamb)
• Optional finish: lemon zest or juice
Method (This order matters)
1. Parboil (key to crispiness)
• Cut potatoes into large chunks
• Add to cold, well-salted water
• Bring to a boil, then simmer 7–8 minutes
• Drain well
2. Rough them up
• Return potatoes to the pot
• Shake gently to create rough, starchy edges
• Let steam-dry 5 minutes
3. Roast hot
• Preheat oven to 425°F / 220°C
• Heat a sheet pan in the oven (important)
• Toss potatoes with olive oil, salt, pepper, oregano
• Spread on the hot pan, cut side down
• Roast 20–25 minutes, flipping once
4. Finish
• Sprinkle with flaky salt
• Optional: lemon zest or a squeeze of lemon
