I’m continuing my Greece inspired week, and this one was too good not to share.
GREEK-INSPIRED PITA (makes 6)
Ingredients
• 300g all-purpose flour
• 1 tsp salt
• 1 tsp sugar
• 2¼ tsp instant yeast
• 200g warm water
• 1–2 tbsp olive oil
• Extra flour (added 1 tbsp at a time if needed)
Method
1. Mix warm water + sugar + yeast. Rest 5–10 min until foamy.
2. In another bowl, mix flour + salt. Add olive oil.
3. Pour yeast mixture into flour. Mix until sticky.
4. If too wet, add flour 1 tbsp at a time until soft + tacky.
5. Knead 5–7 min until smooth.
6. Cover + rise 1 hour (doubled).
7. Divide into 6 balls. Rest 10–15 min.
8. Roll into ~6” rounds (slightly thick).
9. Cook on hot cast iron (no oil) 1–2 min per side.
10. Stack + wrap in a towel to keep soft.
Tip: Thicker dough = softer, foldable pita 🤍
