Japanese-Style Dan Dan Udon 🍜✨
This is the bowl I make when I want something creamy, spicy, comforting but still fast enough for a busy weeknight.
Part of our Japan Week where we’re cooking our way through the country, one recipe at a time. 🇯🇵
Think silky udon noodles, a nutty broth, and a savoury pork topping that comes together in under 20 minutes.
If you love ramen but want something richer + easier, this is the one.
Would you try this at home?
Pork Topping
• Sauté ground pork with salt + pepper
• Add minced onion, garlic, and ginger
• Stir in soy sauce, tahini, chili bean paste (or chili garlic sauce), and a touch of sugar
• Cook until thick, glossy, and fragrant
Broth
• Simmer water with chicken bouillon
• Add tahini or ground sesame, chili oil, and a splash of rice vinegar
• Whisk until creamy
Udon & Greens
• Cook udon until bouncy
• Blanch bok choy or any greens you love
Assemble
• Bowl → broth → udon → pork mixture
• Top with chili oil, green onions, and sesame seeds
• Enjoy immediately (it’s addictive)
(save this so you can make it this week 💛)
If you’re looking to elevate your homemade Dan Dan Udon experience, here are a few tips that helped me perfect the dish. Adding a splash of rice vinegar to the broth not only balances the richness but also brightens the flavors. Don’t rush the pork topping—letting it cook until thick and glossy really brings out the savory depth. For the noodles, fresh udon works best, but frozen or even high-quality dried udon can be great substitutes if fresh are hard to find. When blanching greens like bok choy, make sure to keep them tender-crisp to maintain a fresh contrast against the creamy broth. I love finishing with extra chili oil and toasted sesame seeds to enhance aroma and add a little kick. This bowl hits every comforting note—from creamy to spicy to nutty—making it a go-to recipe that’s easy to customize too. Whether you're new to Japanese noodles or a longtime fan of dan dan dishes, this recipe is a delicious way to enjoy authentic flavors quickly at home.
