I had a craving
So I lit up the grill and made some “smothered” bratwurst. I made a little boat in the center of the rolls to set the bratwurst in then topped that with onions I cooked on the grill, spicy mustard and extra shard white cheddar cheese. I served these up with some spicy broccoli slaw. #grill #summer #dinner
Grilling bratwurst is a classic way to enjoy a quick and satisfying meal, especially during the summer months. What I love most about making smothered bratwurst is the combination of textures and flavors—from the juicy, smoky sausage to the caramelized onions and sharp cheddar cheese that melt just right on top. To bring this dish to the next level, try creating a small "boat" or well in the center of your rolls, which not only holds the bratwurst snugly but also catches the delicious melted cheese and mustard. For the onions, grilling them slowly until golden brown brings out their sweetness and adds a smoky depth that complements the savory sausage. Spicy mustard pairs perfectly here by adding a tangy kick that wakes up your taste buds, balancing the richness of the cheese and meat. Serving the bratwurst with a spicy broccoli slaw adds freshness and crunch, making the meal well-rounded and refreshing. You can easily customize the slaw by adding ingredients like shredded carrots, sliced jalapeños, or a squeeze of lemon juice for an extra zing. From my experience, using extra sharp white cheddar cheese gives a robust flavor that melts beautifully without overpowering the other ingredients. When grilling, make sure the grill is preheated well to get those perfect sear marks on the bratwurst and onions. This meal is ideal for outdoor gatherings, casual dinners, or whenever you’re craving something hearty yet vibrant. Pair it with a cold beverage, light salad, or your favorite chips to round out the experience. Try experimenting with different toppings like sauerkraut, pickles, or different mustard varieties to keep the dish exciting each time you make it.

They look fantastic….love bratwursts.
