A hidden gem of a Dou Chi Hoptpot in Guiyang

📌 Sihai Yijia (Xiaoshicheng Branch)

47 Chunlei Road, Yunyan District, Guiyang, Guizhou

It’s not in a busy commercial area, there are no crowds of tourists, and it sits quietly inside a residential neighborhood. It serves the people who actually live nearby, and the number of returning customers is impressive. That’s probably the business logic behind Sihai Yijia’s success.

It just so happened that my friend lives in the area. At her recommendation, I figured trying the flavors she eats all the time would be a pretty cool experience.

---

🍲 Hotpot Base

Sihai Yijia’s *dou chi* hotpot brings out the full savory aroma of fermented black beans.

The broth is on the spicy and salty side, yet the saltiness carries a surprising umami depth.

---

🥩 Meat Dishes

➤ Ruǎnshào, a Guizhou specialty — dry-fried diced pork with a rich, oily aroma and a bouncy texture. Delish on its own, but even better after it absorbs the hotpot broth.

➤ Beef tendon strips, taken from the upper back of the cow — chewy and full of bite.

➤ Beef slices, all lean with almost no visible fat — perfect for fitness folks who love “clean” protein.

---

🥬 Vegetables

➤ A bowl of assorted seasonal greens — that day it was pea shoots, crisp and tender.

➤ Sliced tofu — it doesn’t absorb much oil, but picks up just enough of the *dou chi* aroma to become the refreshing element of the meal.

---

🥔 Carbs

➤ Potato slices turn soft and sticky in the broth — pure carb happiness.

➤ Glass noodles absorb the broth instantly, locking in all the salty, spicy flavor. They end up tasting even stronger than the original *dou chi* soup.

❗️Tip: Add the carbs at the very end.

Once starch dissolves into the broth, it thickens the base and changes the texture of everything else.

---

🍛 Stir-fry

➤ Kung Pao Beef Tendon — a classic Guizhou-style stir-fry.

Garlic sprouts, dried chilis, and a savory sauce pair perfectly with the tendon’s chewy, springy texture.

---

📖Final Thoughts

Most people have that one neighborhood spot from their childhood — not necessarily mind-blowing, but somehow it becomes the go-to place for hosting friends and family.

Do you have a small neighborhood gem like that near your home? Share it with everyone!

... Read moreAfter experiencing that incredible Dou Chi hotpot in Guiyang, I became obsessed with dou chi itself! It wasn't just the hotpot; that unique flavor lingered and made me want to know more about this magical ingredient. For those who haven't encountered it, dou chi are fermented black soybeans. They're a staple in Chinese cooking, particularly known for their intense umami, savory, and slightly salty flavor. They're often preserved with salt and sometimes ginger or orange peel, giving them a complex aroma. Think of them as flavor bombs that can transform a simple dish. While the Dou Chi hotpot at Sihai Yijia was an absolute revelation, showcasing how these fermented black beans create such a rich and spicy broth, dou chi is incredibly versatile! I've since learned it's a star in countless stir-fries. Remember that amazing Kung Pao Beef Tendon from the restaurant that had me craving more? The rich, savory sauce often gets its depth from dou chi. It pairs beautifully with meats like diced pork and beef tendon, enhancing their natural flavors and adding a layer of pungent deliciousness. I've also seen it used to elevate dishes with beef slices, making them incredibly flavorful. If you want to bring a bit of that Guiyang flavor into your own kitchen, dou chi is surprisingly easy to find in most Asian supermarkets. Look for them in small bags or jars. A common tip I picked up is to give them a quick rinse before using to remove excess salt, especially if you're sensitive to sodium. Then, you can chop or mash them to release their full flavor. They're fantastic in marinades for various meats or quickly sautéed with garlic and chilies to form a flavorful base for vegetables like pea shoots or even sliced tofu. I love how it makes simple ingredients shine. Beyond stir-fries, I've experimented with dou chi in steamed fish dishes – the savory punch really elevates delicate white fish. It's also incredible in mapo tofu or even just mixed into a dipping sauce. The way it works with potatoes, making them 'pure carb happiness' as in the hotpot, is also something I try to replicate at home. The key is to let its deep flavor infuse other ingredients, like when it turns glass noodles into something even stronger and more delicious than the original soup! It truly makes everything taste more complex and satisfying, adding an unforgettable depth. So, next time you're thinking about Chinese food, don't just think about spicy or sweet and sour. Look for dishes featuring dou chi – those little fermented black beans hold a world of flavor. It's an ingredient that truly defines a certain kind of savory depth, making dishes like that Guiyang hotpot an unforgettable experience that you'll want to explore further.
