my favorite chinese takeout recipe🥡

Better Than Takeout Episode 1. Crispy chicken coated in a glossy, sweet, and tangy sauce, General Tsos chicken is my favorite! I love making it at home; less ingredients, much healthier, and so delicious. It’s perfectly paired with a side of white rice and broccoli. Make sure to give this one a try!

- 1 1/2 pounds skinless, boneless chicken thighs, cubed

- 1 teaspoon salt

- 1 teaspoon white sugar

- 1/2 teaspoon red chili powder or cayenne pepper

- 1/2 teaspoon black pepper

- 1/2 packet of sazon (optional)

- 1 cup cornstarch

- Oil for frying

- Scallions, chopped, for garnish

- Sesame seeds, for garnish (optional)

Sauce:

- 1/2 cup white or brown sugar

- 1/4 cup soy sauce

- 1/4 cup chicken broth

- 1 tablespoon rice vinegar

- 2 teaspoons sesame oil

- 2 garlic cloves, minced

- Knob of fresh ginger, grated

- Scallions, chopped

- 6 whole dried red chilis

- Cornstarch slurry (2 teaspoons cornstarch + 1/4 cup water)

Directions:

1. Start by cleaning and cubing the chicken. Season with spices and cornstarch. Make sure to really pack on the cornstarch to the chicken (ensures crispness).

2. Next, make the sauce and set aside. Add some oil to a wok and shallow fry the chicken until crispy and golden brown.

3. Drain out all but 1 tablespoon of the oil. Quickly fry the whole chilis and add the sauce. Once bubbling, add the cornstarch slurry. Simmer until thickened.

4. Add the crispy chicken back into the sauce, coat very well.

5. Finish with chopped scallions and sesame seeds. Give one final toss and serve immediately with white rice, broccoli, or sides of choice. Enjoy!

... Read moreOkay, so you've just made my absolute favorite General Tso's Chicken, and I bet it was amazing! But if you're like me, you're always looking to expand your home cooking repertoire and understand more about Chinese cuisine. Let's dive a little deeper into some questions you might have, from similar dishes to seasoning secrets! First, a question I get asked all the time: What's the difference between General Tso's Chicken and Orange Chicken? It's a great question because they look similar, right? Both feature crispy fried chicken in a sweet and tangy sauce. However, the key distinctions lie in their flavor profiles and ingredients. Orange Chicken, as the name suggests, gets its signature citrusy kick from orange zest and juice, often with a brighter, sweeter taste. General Tso's, on the other hand, typically has a more complex flavor with a bit more heat from dried red chilis (which we used!), a deeper savory note from soy sauce, and a slight tang from rice vinegar. It's usually less overtly sweet than orange chicken and has a more pronounced savory-spicy balance. Both are delicious, but if you love that savory heat, General Tso's is your go-to! Speaking of flavor, let's talk about that glossy sauce and crispy chicken – the stars of our General Tso's! For the sauce, the secret to that beautiful glossiness is the cornstarch slurry. Adding it at the end and simmering gently allows it to thicken and create that perfect sheen. If your sauce isn't as thick as you'd like, don't be afraid to add a little more cornstarch slurry, mixed well, and simmer for another minute. For the crispy chicken, I can't stress enough how important it is to really coat those chicken pieces in cornstarch before frying. This creates a barrier that locks in moisture and gives you that satisfying crunch. Don't overcrowd your wok or pan, as this lowers the oil temperature and can lead to soggy chicken. Fry in batches if necessary! Now, about side dishes. While white rice and broccoli are classics, don't stop there! If you're looking for something that leans into the "chicken and rice" theme like a "Ji Rou Fan" (Taiwanese chicken rice), consider serving your General Tso's with some fragrant jasmine rice topped with a sprinkle of toasted sesame seeds and a drizzle of the sauce. Steamed or stir-fried green beans, snap peas, or even a simple cucumber salad can offer a refreshing contrast to the richness of the chicken. For popular Chinese entrees, you could also try pairing it with some homemade egg rolls or a light hot and sour soup to complete your takeout-at-home experience. Finally, let's touch on general Chinese cooking seasonings. Beyond soy sauce, sesame oil, and rice vinegar, which are staples in many recipes including our General Tso's, having ingredients like ginger, garlic, oyster sauce (for umami depth), chili garlic sauce (for extra kick), and five-spice powder (for aromatic complexity) can elevate so many dishes. When thinking about what to season even something like wonton soup with, these core elements often come into play. A good quality soy sauce is a must-have, whether you're making a simple chicken marinade or a complex stir-fry sauce. Just remember, a little goes a long way with strong flavors like sesame oil and chili! Experiment and find what you love.
