Wednesday Breakfast

I don't know about yall but Pancakes for breakfast are my favorie.favorite. The Krustez mix is he only one my daughter will eat so we have to keep it stocked. Here's how I made them:

Fill cup pictures about ¾ of the way up, pour it into bowl, add about 8oz of water and mix. Heat pan up on med-low heat. Pour and wait for it to bubble before flipping. Flip and wait 30 seconds and transfer to plate. Repeat!!!

Especially when you're looking for those perfect 'breakfast pic' moments or trying to turn a simple meal into an exciting 'pancake breakfast idea'! I've got some go-to tricks to elevate those everyday pancakes into something truly special. First off, let's talk about mix-ins. While the plain pancake is delicious, adding a little something extra to the batter before you pour it can make a huge difference. My daughter loves mini chocolate chips – just a handful stirred into the batter makes them feel like a treat. For a healthier twist, I sometimes fold in fresh blueberries or sliced bananas. A dash of cinnamon or vanilla extract can also add a wonderful aroma and flavor that's just irresistible. Next, the toppings bar! This is where you can get really creative and turn breakfast into an event, perfect if you're aiming for a 'breakfast date at home' feel. Beyond classic maple syrup, try a warm berry compote (just simmer some frozen berries with a touch of sugar and lemon juice). Whipped cream, a sprinkle of powdered sugar, or even a drizzle of chocolate sauce can make them feel gourmet. Don't forget fresh fruit like sliced strawberries, bananas, or a handful of raspberries for color and freshness. Chopped nuts like pecans or walnuts also add a fantastic crunch. To make it a complete and satisfying 'pancake breakfast idea', think about side dishes. While pancakes are the star, a little protein or extra fruit can balance the meal. Crispy bacon or savory sausage patties are always a hit in my house. Sometimes I'll quickly scramble a couple of eggs, or even just slice up an apple or orange to go alongside. A small bowl of Greek yogurt with a drizzle of honey is another great option. And for those 'breakfast pic' aspirations? Presentation matters! Stack your pancakes neatly, perhaps three or four high. Drizzle your syrup artfully over the top, letting it cascade down the sides. Place a few fresh berries or a sprig of mint on top for a pop of color. A dusting of powdered sugar through a small sieve makes everything look more professional and inviting. Even arranging your bacon or fruit decoratively next to the pancake stack can make a big difference for that perfect photo op. Finally, for us busy parents, meal prepping pancakes can be a lifesaver. I often make a double batch on a Sunday, let them cool completely, and then store them in an airtight container in the fridge for a few days, or even freeze them between layers of parchment paper. A quick pop in the toaster or microwave and you've got a delicious, quick breakfast ready to go on those hectic weekday mornings. It’s all about making those 'quick and easy meals' even easier!
