🎃 Creamy Pumpkin Spice Flan 🎃
: one 8–9-inch flan, about 8–10 servings
Caramel
* 1 cup granulated sugar
* ¼ cup water
Pumpkin custard
* 1 can (12 oz) evaporated milk
* 1 can (14 oz) sweetened condensed milk
* ½ cup pumpkin purée — not pumpkin pie filling
* 4 large eggs
* 2 large egg yolks
* 1 tbsp vanilla extract
* 1 tsp ground cinnamon
* ½ tsp ground ginger
* ¼ tsp ground nutmeg
* ⅛ tsp ground cloves
* Small pinch of salt
Optional for an extra-rich flan: 4 oz softened cream cheese. This makes it denser and silkier, almost like a pumpkin-flan/cheesecake hybrid.
1. Make the caramel
Put the sugar and water in a small saucepan over medium heat. Let it cook without stirring until it becomes a deep golden-amber color.
Immediately pour it into your flan pan or 8–9-inch round cake pan and carefully tilt the pan to coat the bottom. Set aside to harden.
2. Make the pumpkin custard
Heat your oven to 325°F.
Blend the evaporated milk, condensed milk, pumpkin, eggs, egg yolks, vanilla, spices and salt just until completely smooth. Don’t blend for too long—you don’t want to whip lots of air into it.
If you’re using the cream cheese, blend it with the condensed milk first until completely smooth, then add everything else.
For an extra-silky flan, pour the mixture through a fine-mesh strainer before adding it to the caramel-lined pan.
3. Bake in a water bath
Pour the custard over the hardened caramel.
Place the flan pan inside a larger roasting or baking pan. Add hot water to the outer pan until it reaches about halfway up the sides of the flan pan.
Cover the flan loosely with aluminum foil.
Bake for approximately 60–75 minutes. The edges should be set, but the center should still have a gentle jiggle when you move the pan.
4. Chill
Remove it from the water bath and let it cool. Refrigerate for at least 6 hours, but overnight is even better. The texture gets creamier and the pumpkin-spice flavor develops more.
5. Flip! 🍮
Run a thin knife around the edge. Place a large plate over the pan and quickly flip it over. The caramel should run beautifully over the pumpkin flan.
