This brown sugar cinnamon syrup gives you that warm, spiced sweetness. Ideal for coffee, lattes, breakfast drinks, pancakes, and more.
Ingredients:
• 1 cup water
• 1 cup dark brown sugar
• 3 cinnamon sticks (or ground cinnamon)
• 1 tsp vanilla extract (optional)
Instructions (expanded):
1. Combine water, brown sugar, and cinnamon sticks in a saucepan.
2. Heat gently, stirring until sugar fully dissolves.
3. Let it simmer (low) for 2–3 more minutes to deepen flavor.
4. Remove from heat and let cinnamon steep for a few minutes.
5. Strain out the cinnamon sticks, stir in vanilla if using.
6. Cool before bottling.
Storage & Tips:
• Store in an airtight jar in the refrigerator. Should last ~1–2 weeks.
• Use a ground cinnamon option if you don’t have sticks, but strain carefully to avoid grit.
• Simmering longer or steeping adds more spice depth, but don’t let it burn or boil hard (that causes crystallization).
Good with: coffee drinks, iced lattes, pancakes, oatmeal, baked goods, even cocktails.

Brown sugar cinnamon syrup is a versatile and delightful addition to many dishes and drinks beyond just coffee and pancakes. When making this syrup, using dark brown sugar provides a richer molasses flavor, enhancing the depth and warmth of the final product. Cinnamon sticks are preferable as they offer a clean infusion that is easy to strain out, but if you only have ground cinnamon, be sure to strain carefully to avoid grit in your syrup. Including vanilla extract is optional but highly recommended, as it complements the cinnamon's spiciness with a smooth sweet aroma, creating a well-rounded taste. The simmering process is key; a gentle simmer allows the flavors to meld perfectly without risking crystallization or burning the sugar. The instruction to steep the cinnamon sticks after removing the syrup from heat further intensifies the cinnamon essence. This syrup can be stored for about one to two weeks in a refrigerator-safe airtight jar, making it easy to prepare in advance. Besides coffees and breakfast dishes like oatmeal or pancakes, you can try adding it to cocktails for a unique twist or drizzle it over desserts such as ice cream or cakes. For those looking to experiment, consider infusing the syrup with other spices like nutmeg or star anise during simmering to create personalized flavor profiles. The syrup also pairs beautifully with seasonal ingredients during holidays, offering a cozy touch to festive recipes. In summary, brown sugar cinnamon syrup is a simple but impactful way to add warmth and sweetness to everyday breakfasts and beverages. Preparing it at home not only ensures fresh flavor without preservatives but also allows you to customize sweetness and spice intensity to your preference.
