... Read moreMaking homemade oatmeal breakfast cookies has been a game changer in my morning routine. I love how quick and easy they are to prepare — just mash some ripe bananas and mix them with quick oats, creamy peanut butter, and a few simple ingredients like cinnamon, vanilla, and a pinch of salt. Adding mini chocolate chips brings in a touch of sweetness that kids adore without overpowering the natural flavors. What I appreciate most about this recipe is its versatility and nutritional benefits. The bananas provide natural sweetness and potassium, oats add heart-healthy fiber, and peanut butter contributes protein and healthy fats, making these cookies a balanced breakfast or snack option. They bake evenly at 350°F for about 14 minutes and hold their shape wonderfully, which is perfect for little hands to grab and enjoy. I also like that I can customize this base recipe by swapping out peanut butter for almond or sunflower seed butter if there are allergy concerns. Additionally, swapping mini chocolate chips for raisins or chopped nuts can add variety. These oatmeal breakfast cookies have become a staple in my household, especially for busy mornings when time is limited but I want to provide my toddler with something wholesome and satisfying. The cinnamon and vanilla add a cozy warmth, making them comforting and crowd-pleasing. If you’re looking for a toddler-friendly, nutritious recipe that’s fast and fuss-free, I highly recommend trying these oatmeal breakfast cookies. They’re a wonderful way to sneak in wholesome ingredients and keep little ones fueled and happy throughout the day.
