this is something my mother used to make for us all the time growing up. it was a quick lunch, and it was one of those things that tasted all “warm and cozy”. classic comfort food. (recipe below)
Classic Creamy Tuna Noodle Casserole
Ingredients
12 oz wide egg noodles
2 cans (5 oz each) solid white albacore tuna, drained and flaked (I only ever use white albacore, but feel free to swap in chunk light or whatever tuna you prefer!)
1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
1 cup frozen peas
1 cup shredded cheddar cheese
1/2 cup milk or heavy cream
1/2 cup sour cream (optional, for extra creaminess)
1/2 cup breadcrumbs or crushed Ritz crackers mixed with 2 tbsp melted butter (for the crispy topping)
Salt, fresh cracked black pepper, and garlic powder to taste
Instructions
1. Prep & Boil: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish. Boil egg noodles in salted water according to package directions, cooked just until al dente. Drain well.
2. Mix the Base: In a large bowl, whisk together the cream soup, milk, sour cream, garlic powder, salt, and black pepper.
3. Combine: Fold in the cooked noodles, drained albacore tuna, green peas, and shredded cheddar cheese until everything is evenly coated.
4. Assemble & Top: Transfer the mixture into your prepared baking dish and spread it into an even layer. Evenly sprinkle the buttery breadcrumb or Ritz cracker topping over the top.
5. Bake: Bake uncovered for 20–25 minutes, until the casserole is bubbly around the edges and the topping turns a golden crunch.
