... Read morePacking a lunch as a nurse can be quite the challenge, especially during those long and hectic shifts. Since adopting the mini crockpot for my meals, it has truly transformed my lunch routine. Kroger's ready-to-cook skillet meals, such as the beef and broccoli option, not only cook quickly but also provide a balanced, protein-rich meal that's easy to prepare ahead of time. I love customizing mine with my own seasonings, including an ultimate garlic blend I found at the store, which enhances the flavor without adding extra calories.
The kale crunch salad is another staple in my lunchbox. Inspired by the Chick-fil-A recipe I came across on Lemon8, I often make a larger batch and add my favorite spicy sriracha sauce for a kick. This salad is refreshing, packed with nutrients, and complements the warm crockpot meal perfectly. Including fresh green grapes adds a natural sweetness and a great source of quick energy to keep me going.
To keep things sustainable and organized, I carry my stainless steel cutlery set from Amazon and a cute pink reusable ice pack that keeps everything fresh during my shift. And yes, I allow myself a little treat—a jumbo M&M sugar cookie that's soft and irresistible, making lunchtime feel special.
What I appreciate most is that this lunch setup is not only simple and quick but genuinely filling, helping me avoid the temptation of buying expensive or less nutritious food options at work. Plus, having a lunchbox that fits everything perfectly and looks cute makes the whole experience more enjoyable. If you're a nurse or anyone with a demanding schedule, meal prepping with tools like a mini crockpot and ready-made meals can be a total game changer for both your health and wallet.

I already wanted the Stanley lunch box, just didn’t want to spend the money. After seeing a mini croc pot fits inside…. I’m sold.
How long does it take to cook your meals at work with that? I’d love to get away from the microwave
I have the same lunch bag and it is awesome. My lunch today is homemade navy bean “hummus” with tomatoes and sharp cheddar on whole grain toast, an apple, 2 mandarin oranges and some yogurt. Pink ice pack of course. High in protein, calcium, vitamins, minerals and fiber. Fellow nurse working in Louisiana.
