Viral Gluten-Free Bagels: My Baking Adventure (and Misadventure!)

This weekend, I tried out that viral gluten-free bagel recipe using yogurt and gluten-free flour. I enjoy trying new recipes now and then, even if I'm not sure how they'll turn out. It's always a fun adventure!

Here’s how it went:

1. Preheat your oven to 400°F.

2. Mix gluten-free flour and yogurt in a bowl. You'll eventually need to use your hands, so get ready to get a little messy!

3. Once everything is combined, flatten the dough and section it into four parts.

4. Shape them into bagels, then whisk an egg and brush it over each one.

5. Season them however you like; I went with everything bagel seasoning this time.

6. Bake until they're a nice golden brown. About 25-30 mins

To be honest, they didn't quite turn out right this time. They were super thick and solid on the inside, so much so that we couldn't even eat them. The outer crust was actually great, but the inside just didn't work out. I’ll definitely be looking for a different recipe to try next time because I'd love to give this another shot!

... Read moreAs someone who loves experimenting with gluten-free recipes, I decided to try the trendy yogurt-based gluten-free bagel recipe recently making the rounds online. Mixing gluten-free flour with yogurt produces a dough that's quite different from traditional wheat-based dough, which can definitely feel tricky at first. When shaping the bagels, using hands instead of utensils helped me better handle the sticky dough and form proper rings. One important thing I learned is that gluten-free flours vary greatly in absorbency and texture, so results can differ widely based on your specific flour blend. For my next attempt, I plan to incorporate xanthan gum or psyllium husk for better binding and elasticity to avoid that overly thick and solid interior I ended up with this time. Also, letting the bagels rest a little before baking might help them rise and bake more evenly. Applying an egg wash and sprinkling everything bagel seasoning gave the crust a beautiful golden color and irresistible flavor, which I highly recommend. Baking at 400°F for 25-30 minutes worked well for the crust crispness, but I might try reducing the bake time slightly to maintain a softer interior. Overall, while this recipe didn't quite yield perfect bagels for me, it was a fun and educational baking adventure. I'm excited to try different gluten-free flour mixes and maybe incorporate a proofing step next time. For anyone gluten-free looking to make homemade bagels, experimenting with hydration and binders is key, and don’t be discouraged by initial hiccups—practice really helps! If you’re curious about gluten-free baking, the yogurt-bagel method is worth trying because it’s simple and uses common ingredients. Just be prepared to tweak the recipe to fit your taste and flour type for the best results. Happy baking!
