Chocolate Sourdough Starter

**Ratios below!!

Last night I did the first feed for my chocolate sourdough starter. The consistency is definitely thick but the smell is incredible!! It took a little longer to rise as suspected. Overall I’m pretty excited! I discarded some and fed again with the same ratios.

I did a 1:2:3:1 ratio

10g starter

20g bread flour

30g water

10g coco powder

When I first began, I followed a simple feeding ratio of 1:2:3:1 — that is, 10g starter, 20g bread flour, 30g water, and 10g cocoa powder. This mixture creates a thick, luscious starter that smells incredibly inviting, combining the yeasty scent of sourdough with the subtle chocolate aroma. One important tip is to expect the rising time to be a bit longer than a regular sourdough starter, due to the cocoa powder’s effect on yeast activity. Patience is key! I found that discarding some starter and feeding it again with the same ratios every 12 to 24 hours keeps the starter healthy and active. Using bread flour helps develop good gluten structure, which is essential when baking sourdough bread. The cocoa powder not only adds flavor but also a lovely color and a slight bitterness that complements the sourdough’s natural tanginess. If you're experimenting at home, make sure to keep your starter in a warm place away from direct sunlight. Stirring the starter gently before each feeding helps incorporate oxygen, which encourages yeast growth. Over several days, you’ll notice the starter becoming bubbly and more pronounced in aroma — a great sign it's ready to use. I recommend trying this chocolate sourdough starter for baking chocolate-infused breads, rolls, or even sweet treats like sourdough brownies. The versatility of this starter makes homemade baking extra special. Happy baking!
