Another quick dinner that my toddlers actually ate 🙌🏼 this cheesy tortellini was so simple, comforting, and perfect for a busy weeknight.

Ingredients:

• 1 package beef tortellini

• 1–2 tbsp butter or olive oil

• 2 garlic cloves, minced

• 1 cup tomato or marinara sauce

• 1–2 tbsp tomato paste, if needed to thicken

• 1 handful fresh spinach, finely chopped

• ½ cup shredded mozzarella

• Italian seasoning, to taste

• Salt and pepper, to taste

• A splash of reserved pasta water, only if needed

1. Cook the tortellini according to the package directions, then drain. reserve a little pasta water before draining, just in case.

2. Melt the butter in a pan and sauté the minced garlic for about 30 seconds.

3. Add the tomato sauce, spinach, and italian seasoning. let everything simmer until the spinach softens.

4. If the sauce is too thin, stir in a little tomato paste and simmer for a few more minutes.

5. Add the mozzarella and stir until melted and creamy.

6. Add the cooked tortellini and gently toss until everything is coated. use a splash of pasta water only if the sauce needs loosening.

7. Serve warm and prepare to go back for seconds, because i definitely did 😋

Creamy, cheesy, and such an easy way to sneak a little spinach into a toddler-friendly meal. save this one for your next busy weeknight dinner! 🤍

... Read moreI’ve tried many quick pasta dishes for my little ones, and this cheesy tortellini has become a go-to in our household because it combines simplicity with flavors kids actually enjoy. The best part is how easily it incorporates fresh spinach, which is often a struggle to sneak into toddler meals. The creamy texture from the melted mozzarella makes the sauce rich without being overwhelming, and the garlic adds a subtle but tasty depth. One tip that worked well for me was reserving some pasta water before draining the tortellini. Adding a splash of that starchy water helped loosen the sauce perfectly when it got a bit too thick, making sure every bite was smooth and saucy. I also recommend cooking the garlic just briefly in butter or olive oil to avoid any bitterness, which young kids can be sensitive to. For busy parents, this recipe is lifesaving; the ingredient list is straightforward and likely what you already have on hand. You can even swap out beef tortellini for cheese or spinach-filled varieties depending on your toddler’s preferences. The tomato paste addition is clever for thickening the sauce quickly, so don’t skip it if your sauce feels too thin. Overall, this easy cheesy tortellini is comfort food made toddler-friendly—it makes feeding picky eaters less stressful and dinner prep faster. I suggest keeping a batch of fresh spinach chopped and ready in the fridge so you can add that nutritious boost effortlessly. This recipe reminds me that nutritious meals don’t have to be complicated, even for the busiest families! Try it out and watch your toddlers ask for seconds just like mine did.
