PRETZEL BREAD
So I made pretzel bread, I’m a huge fan of Trader Joe’s pretzel bread so this was definitely worth making.
This recipe makes 6 tiny buns/loaves. We don’t always want like 20 loaves.
Here’s the Recipe
- 3/4 cup warm milk
- 1/2 tablespoon of brown sugar
- 1 tsp salt
- 1/2 package of yeast
- 1 teaspoon melted butter
- 1 egg
- 2 1/4 cup of flour
- 5 cups of water + 1/3 of baking soda
Mix your warm milk brown sugar and salt with the yeast. Then add your egg and butter, following with flour (slowly). Once kneaded well (I say like 10- 15 minutes on the machine if you have one) let it rise for an hour (I say place it near a sunny window). Once risen you can pop the air bubble in the dough and split it into 6 pieces or more or less. While doing this boiling the 5 cups of water along the 1/3 cup of baking soda. Once boiled let the balls of dough be in there for about a minute each (30 seconds on each side). Finally baking at 400 degrees for about 25 minutes ( make sure to turn the pan around about halfway through).
Hope you guys enjoyyy!!
I'm so excited to share my pretzel bread journey with you all! While the recipe itself is straightforward, I've picked up a few extra tips and tricks that really elevate these tiny loaves from good to absolutely amazing. If you're like me and love getting a close-up of that perfect baked good, you'll appreciate these details! First, let's talk about the magic of the baking soda bath. This step is non-negotiable for that authentic pretzel crust and color. When you boil the dough balls in the alkaline water, it's what gives them that signature chewy exterior and beautiful golden-brown hue. Make sure your water is at a rolling boil, and don't overcrowd the pot – give each round dough ball enough space to swim. Thirty seconds on each side is usually perfect to get that chemical reaction going without cooking the dough through. And remember to gently transfer them to your baking sheet afterwards, ready for the oven. Speaking of the oven, don't underestimate the power of rotating your pan! My recipe suggests turning it around halfway through baking, and I've found this makes a huge difference in ensuring an even bake. Nobody wants one side perfectly golden and the other a little pale. The goal is a consistent, beautiful crust all around, just like you'd see in a professional bakery. Keep an eye on them, as oven temperatures can vary. Now, for those of you who are intrigued by the idea of sourdough pretzel bread, let me tell you, it's a whole different ball game – in the best way possible! While my recipe uses commercial yeast for a quicker rise, a sourdough version would add an incredible depth of flavor and a more pronounced chewiness. If you have an active sourdough starter, you could try adapting this recipe by replacing the commercial yeast with a fed starter and allowing a longer, slower fermentation period, perhaps even an overnight cold proof. The tangy notes of sourdough would beautifully complement the savory pretzel flavor. It's definitely a project for another day, but worth exploring if you're a sourdough enthusiast! Finally, let's talk about enjoying these delicious pretzel buns. They are absolutely fantastic on their own, especially when still warm from the oven, offering a soft interior and that satisfying chew. But they also make incredible sliders, perfect for mini sandwiches with cheese and deli meats. I've even seen people use them for mini hot dogs – think pretzel dogs! And for an extra treat, a sprinkle of coarse sea salt right after they come out of the baking soda bath and before baking adds that classic pretzel finish. Trust me, once you master these, you'll want to make them all the time. They're such a crowd-pleaser and seeing that light, fluffy internal texture when you break one open is just pure joy!
