Short Rib Recipe
Occasion & Servings: Dinner for 2
Ingredients:
Minced garlic
thinly sliced onion 🧅 (small to medium yellow)
Olive oil
Red wine
Fresh rosemary or other herbs
Mushrooms
1-2lbs short ribs
Celery
Carrots (small sized or diced big 🥕)
Mushrooms
1-2 carton of beef stock (depending on size)
Potatoes (5-6 small-medium size)
Butter
Detailed Steps:
1. Heat pot to medium high with good helping of olive oil
2. When hot sear all sides of the short ribs
3. Season short ribs with salt and pepper
4. Take off the pot and add in minced garlic and sliced onions for 1-2 minutes until transparent
5. Add in the carrots and celery for 2-3 minutes and season with salt and pepper
6. add in the short ribs while turning stove to medium low
7. Add in half bottle of red wine and a cup or 2 cups of beef stock. Want the short ribs soaking in liquid
8. Add the fresh herbs and lid on and let simmer medium low for couple hours until the liquid thickens and reduces. Make sure to stir bottom so it doesn’t burn and scoop the fat from top occasionally
9. After 2-3 hours I transfer over to the oven to bake for 375F for 30-45 minutes in a Dutch oven or deep dish pan
10. I took some boiling water and boiled peeled brown potatoes for 20-30 minutes and drained most of the water leaving 1/2-1 cup of the potato starch liquid. Added half stick of butter, my choice of seasonings, and 1/2-1cup of milk depending how liquidy you want it. I use an automatic mixer
10. Slice mushrooms and cook in butter on medium for 7 minutes until shrunk in size
11. Once short rib is tender you can make some sauce using the liquid from the braise saved from the pot and pour some over the short ribs and potatoes and serve with mushrooms
Additional tips/notes:
Good side dish is Brussel sprouts in the oven 375F with olive oil stir occasionally during the 25-30 minutes and after drizzle with hot honey
