lazy dinner🫠
What I cook after work :)
Nothing fancy today.. just a little homesick green curry chicken 🐣
CNY wiped out half the ingredients so I went full improv mode and made a healthier version:
- Chicken breast
- Zucchini instead of eggplant
- Oat milk instead of coconut milk
- Chilli, basil
- Green curry paste (I’m not grinding anything after work 😂)
Follow the step-by-step in my video.
Promise next time I will do more authentic, when I’m not lazy.
Best with rice… and even better with rice noodles 🤎
When it comes to making green curry chicken after a long workday, simplicity and healthiness can still go hand-in-hand. Using chicken breast instead of darker meat cuts reduces fat content, while swapping traditional eggplant for zucchini adds a fresh, lighter texture that cooks quickly. I found using oat milk instead of coconut milk made the curry creamier without overpowering the flavors, and it’s great for those avoiding dairy or coconut. This improvised version is both nutritious and satisfying, especially with the heat of chili and fragrant basil balancing the mild curry paste. If you want to save even more time, using store-bought green curry paste is a smart shortcut—no grinding or prepping spices needed after a tiring day! Pairing this dish with rice or rice noodles complements the creamy sauce perfectly, making it a fulfilling meal that doesn’t require hours in the kitchen. For anyone feeling 'I have nothing to do after work' and craving an effortless but tasty homemade dinner, this recipe is a real lifesaver. It’s also easy to adjust ingredient quantities or swap in what’s available, making it flexible and perfect for minimizing food waste.
