It’s weeknight-friendly, meal-prep friendly, and it tastes like you tried way harder than you did.

Pick your beef: sliced steak or ground beef

I keep two options in rotation because they cook differently and scratch different itches:

Option A: Thin-sliced steak (round steak, ribeye, or any tender cut you can slice thin). This is the move for Mongolian beef and crispy chilli beef. You get that restaurant-style bite and the sauce clings like crazy.

Option B: Ground beef (1 lb is perfect for quick bowls, pasta, stuffed shells, and Mediterranean-style stir fry). This is the “I’m tired but still want a real dinner” option.

If I’m planning ahead, I buy both. If I’m not, I buy ground beef and still make something that tastes like a full-on craving meal.

My core pantry flavors (the “beef sauce toolkit”)

These are the flavors that show up again and again across Mongolian beef, bulgogi-style bowls, chilli beef, and even quick pasta nights:

Soy sauce (salty base), brown sugar (sweet balance), rice vinegar (brightness), sesame oil (toasty finish), garlic + ginger (the backbone), and cornstarch (for crisping and thickening).

Once you have those, beef dinners stop being stressful because you can always build a sauce that tastes “intentional.”

Recipe 1: Air Fryer Mongolian Beef (sweet, glossy, sticky)

Sauce

• 4 tbsp sweet chili sauce
• 2 tbsp ketchup

How I make it
