🥩 Cook Once, Eat Twice: Leftover Steak Fried Rice
One of the easiest ways to reduce food waste is to cook with intention. I made extra steak the night before, knowing I could turn it into something completely different the next day. With a few vegetables I already had in my refrigerator and some cold rice, dinner came together in under 30 minutes—and it tasted even better than takeout!
Ingredients
• 2 cups cooked leftover steak, diced
• 3 cups cold cooked rice
• 1 cup broccoli florets
• 1 carrot, diced
• 2 celery stalks, diced
• ½ small onion, diced
• 4 oz mushrooms, sliced
• 2 green onions, sliced (plus more for garnish)
• 2 tablespoons soy sauce
• 1 tablespoon sesame oil (or neutral cooking oil)
• 2 teaspoons minced garlic
• 1 teaspoon fresh grated ginger (optional)
• 2 eggs (1 mixed into the rice if desired, 1 fried for topping)
• Chili crisp, for serving
• Salt and black pepper, to taste
Directions
1. Heat oil in a large skillet or wok over medium-high heat.
2. Sauté the onion, celery, carrots, broccoli, mushrooms, garlic, and ginger until the vegetables are crisp-tender.
3. Add the diced leftover steak and cook just until warmed through.
4. Stir in the cold rice, breaking up any clumps.
5. Add the soy sauce and toss until everything is evenly coated and heated through.
6. Stir in the sliced green onions.
7. Fry an egg until the whites are set and the yolk is still runny.
8. Serve the fried rice topped with the fried egg, extra green onions, and a spoonful of chili crisp.

My Review: This is one of my favorite ways to use leftovers because it doesn’t taste like leftovers at all. The steak stays tender, the vegetables add fresh flavor and texture, and the fried egg with chili crisp takes the whole dish to another level. It’s an easy weeknight dinner I’ll make again and again.
