Roasted Vegetable & Sweet Potato Orzo Salad
Serves: 4–6
Ingredients
Roasted Vegetables
* 1 medium sweet potato, peeled and diced
* 1 zucchini, sliced into half moons
* 1 yellow squash, sliced into half moons
* 1 red bell pepper, chopped
* ½ red onion, cut into chunks
* 2 tablespoons grapeseed oil
* 1 teaspoon garlic powder
* 1 teaspoon smoked paprika
* 1 teaspoon Italian seasoning
* Salt and black pepper, to taste
Orzo
* 1 cup dry orzo
* Salted water for boiling
Honey Lime Dressing
* ¼ cup grapeseed oil
* 2 cloves garlic, minced
* Juice of 1 lime
* 1 tablespoon honey
* ½ teaspoon salt
* ¼ teaspoon black pepper
Optional Add-Ins
* Grilled chicken
* Crumbled feta cheese
* Fresh parsley or basil
* Toasted pumpkin seeds or pecans
Instructions
1. Preheat oven to 425°F.
2. Toss the sweet potato, zucchini, squash, bell pepper, and red onion with grapeseed oil, garlic powder, smoked paprika, Italian seasoning, salt, and pepper.
3. Spread the vegetables on a parchment-lined baking sheet and roast for 25–30 minutes, stirring halfway through, until tender and lightly caramelized.
4. Cook the orzo according to the package directions. Drain and rinse briefly under cool water.
5. Whisk together the grapeseed oil, garlic, lime juice, honey, salt, and pepper.
6. Combine the cooked orzo and roasted vegetables in a large bowl.
7. Pour the dressing over the salad and toss until evenly coated.
8. Top with grilled chicken, feta, fresh herbs, or toasted nuts if desired.
9. Serve warm or chilled. Refrigerate leftovers for up to 4 days.
