... Read moreBeing a new mom, especially with two little ones like me, means time is a precious commodity. Cooking can feel like an Olympic sport! But nourishing yourself during postpartum recovery is so important. I quickly learned that having a few go-to, easy recipes makes all the difference. One of my biggest tips is leveraging appliances like the slow cooker. I love throwing in ingredients for a hearty pot roast with carrots and onions in the morning, and by dinner, I have a comforting meal ready to go. It’s perfect for those days when you barely have time to think, let alone chop ingredients. Similarly, a good stew can simmer away, filling the house with delicious aromas and providing leftovers for days. For quick breakfasts, a pre-made breakfast burrito can be a lifesaver. You can prep a batch on the weekend, freeze them, and just microwave one when you need a fast, energizing start to your day. And speaking of quick meals, a colorful pasta salad with chicken and fresh veggies like zucchini and bell peppers is fantastic for lunch or a light dinner. It’s easy to make a big batch and keep it in the fridge. When thinking about family meals, I try to balance convenience with nutrition. Recipes like meatloaf are always a hit and can often be stretched with sides like a fresh green salad. For something a bit more fun but still manageable, mini taco cups are great – kids love them, and they come together quickly. Even something like homemade fried chicken or savory egg rolls can be made ahead or in batches for busy evenings, maybe air-fried for a healthier twist. To make sure I'm getting a balanced 'zone' of nutrients without overthinking it, I focus on: Protein: Keeps you full and aids recovery. Think chicken, beef, eggs. Healthy Fats: Important for energy and brain health. Avocados, olive oil. Complex Carbs: Sustained energy. Whole grains, sweet potatoes. Lots of Veggies: Vitamins and fiber. Add them to everything! I've found that having a pantry stocked with staples and a few freezer-friendly meals makes postpartum cooking less daunting. Don't be afraid to embrace batch cooking, utilize your slow cooker, and simplify your recipes. Every little bit helps when you're navigating new parenthood. Remember, taking care of yourself is just as important as taking care of your little ones!
