The more you chew, the more delicious it is, and later you know that sake lees are kneaded, and the taste is different from other pizza shops.
The homemade sausage is also insanely delicious.
When eaten with honey, the taste changes and this is also excellent.

Pizza (15 types in total) The dough uses yeast made from sake lees of local sake "Shugetsu." We are particular about ingredients, bacon and sausages using Sangen pork are made, and vegetables are mainly grown in-house. Honey is taken from Japanese honey bees. Volume pizza with a diameter of 25 cm is served on a Tanba ware plate.
Our favorite menu is homemade black bean miso, sausage, mozzarella, lotus root with Japanese pepper powder.
They are also particular about drinks such as an assortment of five kinds of appetizers that spare no effort, additive-free gelato made from brown Swiss grazing milk, homemade yuzu and ginger ale.
Opened last September. A relaxing space with handmade pizza ovens, hearths, and custom-made firewood stoves.

「薪窯ピザ＆ジェラート オモト」は、初めて行く前に“メニューは？写真で雰囲気を見たい”“実際どうだった？”が気になっていたので、私目線で補足レビューを書いておきます。 まず外観は、紺色の暖簾と木の看板が目印で、いわゆる古民家っぽい落ち着いた雰囲気。中に入ると、木製テーブルの明るいダイニング席と、囲炉裏のある和風の座敷席があって、どちらも居心地が良かったです。さらに店内に特注の薪ストーブがあり、火が見えると空間が一気にあたたかく感じました。写真で見ていた通りでしたが、実物の方が“くつろげる感”が強めです。 メニューはピザが豊富で、定番のマルゲリータ系から、丹波篠山らしい具材のものまで幅広い印象。私が食べたのは「トマトとしらすのマリナーラ」と「ソーセージとレモンのピザ」。マリナーラは、トマトソースにしらす＋ミニトマト＋オリーブ＋バジルの組み合わせで、さっぱりだけど旨みが濃いタイプ。ソーセージとレモンは、レモンの酸味が強すぎず、脂の甘さを軽くしてくれるので最後まで重たくならなかったです。どちらも丹波焼のお皿で提供されて、見た目も良かったです。 スープはこの日はかぼちゃスープで、陶器の器に入っていてほっとする味。ピザの前に温かいスープがあると満足度が上がりました。 レビューとして一番印象に残ったのは生地。カリッとしているのに中はもちっとしていて、噛むほど香りが出る感じでした。あとで酒粕が練り込まれていると知って納得。自家製ソーセージもかなり本格的で、蜂蜜をつけて食べる“味変”が想像以上に合いました。 今回はジェラートを見送ったのですが、無添加ジェラートやドリンク（ユズ、ジンジャエール等）も推しポイントみたいなので、次は食後に合わせたいです。メニュー選びに迷ったら、まずはマリナーラ系＋ソーセージ系の2枚をシェアすると、方向性が違って満足しやすいと思いました。住所は「兵庫県丹波篠山市福住366」です。
