Graham-cracker crust
* 2 cups graham-cracker crumbs
* ¼ cup granulated sugar
* ½ cup (1 stick) unsalted butter, melted
* ½ tsp cinnamon
Pumpkin cheesecake filling
* 3 packages (8 oz each) cream cheese, room temperature
* 1 cup granulated sugar
* 1 cup 100% pumpkin purée (not pumpkin pie filling)
* 3 large eggs, room temperature
* ½ cup sour cream
* 1 tbsp vanilla extract
* 1½ tsp cinnamon
* ½ tsp ground ginger
* ¼ tsp nutmeg
* ⅛ tsp ground cloves
* 2 tbsp all-purpose flour
* ¼ tsp salt
Optional topping
* Whipped cream
* Sprinkle of cinnamon or pumpkin-pie spice
* Caramel sauce
1. Make the crust
Heat the oven to 350°F.
Mix the graham crumbs, sugar, cinnamon and melted butter. Press firmly into the bottom of a 9-inch springform pan, bringing a little up the sides if you’d like.
Bake for 8–10 minutes, then remove and let it cool. Reduce the oven to 325°F.
2. Make the filling
Beat the softened cream cheese and sugar on low-medium speed until completely smooth.
Add the pumpkin, sour cream, vanilla, spices, flour and salt. Mix until combined.
Add the eggs one at a time, mixing on low just until each disappears into the batter. Once the eggs go in, try not to overmix—the extra air can make the cheesecake puff up and crack.
3. Bake
Pour the filling over your crust and smooth the top.
For the creamiest texture, I recommend a water bath. Wrap the outside of the springform pan very well with heavy-duty foil, place it inside a larger roasting pan, and pour hot water around it until it reaches about halfway up the cheesecake pan.
Bake at 325°F for about 60–75 minutes.
It’s ready when the outside is set but the center 2–3 inches still jiggle slightly when you gently shake the pan. Don’t wait for the entire thing to become firm.
4. Cool it slowly
Turn the oven off, crack the door open and leave the cheesecake inside for about 1 hour.
Remove it, let it finish cooling to room temperature, then refrigerate for at least 6 hours—overnight is best.
5. Decorate 🎃
Once it’s completely chilled, remove the springform ring. Add little whipped-cream swirls around the edge and dust them with cinnamon.
