You know, while I absolutely adore my Curious Elixirs for those days I want something easy and functional, sometimes you just get a craving for a specific type of mocktail, especially when summer hits! I totally get why so many of you are searching for 'summer delight mocktails' and even something as fun as a 'blue mocktail.' There’s just something so inviting about a vibrant, refreshing drink, isn't there? Let's talk about those gorgeous blue mocktails first! While my go-to Curious Elixirs are amazing, if you’re dreaming of a dazzling blue hue, you can totally DIY it. My secret? Butterfly pea flower! You can get it as a tea or a powder, and it gives the most stunning natural blue color to any drink. Just brew a strong butterfly pea flower tea, let it cool, and use it as your base. Add some fresh lemon or lime juice, and watch the magic happen – it often changes from blue to purple! For a vibrant blue mocktail that’s pure summer delight, I love mixing cooled butterfly pea tea with lemonade, a splash of ginger ale, and garnishing with a slice of lemon and a sprig of mint. It's so visually appealing and tastes incredibly refreshing. Another option for a natural blue is a tiny pinch of blue spirulina powder, but a little goes a long way and can sometimes have an earthy taste, so start small! And for general 'summer delight mocktails,' the possibilities are endless! Think about what truly screams 'summer' to you. For me, it’s fresh fruit and herbs. One of my absolute favorite easy summer mocktails is a Watermelon Mint Cooler. Just blend fresh watermelon chunks with a handful of mint leaves, a squeeze of lime, and a touch of agave or honey if your watermelon isn't super sweet. Strain it if you prefer it smooth, then pour over ice and top with sparkling water or plain soda water. It’s incredibly hydrating and bursting with flavor. Another winner is a simple Berry Basil Smash: muddle mixed berries (strawberries, raspberries, blueberries) with a few fresh basil leaves, then add a splash of elderflower cordial or simple syrup, and top with tonic water or sparkling limeade.
