I Made Banana Bread With OATS?!
I wanted something sweet but still simple and made with ingredients I already had, so I made this lighter banana bread using oats instead of traditional flour and skipped the butter
Ingredients
3 ripe bananas
2 eggs
2 cups old-fashioned oats
1 cup yogurt or milk
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
½ tsp baking soda
How to make it
1. Add the bananas, eggs, yogurt (or milk), and vanilla to a blender and blend until smooth.
2. Add the oats, cinnamon, baking powder, and baking soda. Blend until everything is well combined.
3. Pour the batter into a greased or parchment-lined loaf pan.
4. Bake at 350°F for 35–45 minutes, or until the center is set and a toothpick comes out mostly clean.
5. Let it cool, slice, and enjoy.
I love having a slice with Greek yogurt or a little peanut butter. It makes such an easy breakfast or snack when I want something sweet but don’t want to make an entire dessert.
