写真で麺のアップを撮りたくなるうどんって、実はそんなに多くないんですが、「わだち草」はまさにそれでした。箸で持ち上げた瞬間、麺が“つるっ”というより“むちっ”と立ち上がる感じで、太さもあって存在感がすごい。麺の色が少し茶色っぽいので最初は驚いたんですが、これは「小麦の色」そのもの。石臼挽きでフスマまで入れているから、と聞いて納得しました。 私が行った日は、ぶっかけ系とざる系が気になって迷いました。麺の風味をしっかり確かめたいなら、まずは「ざる」か「生しょうゆ」がおすすめです。つゆやしょうゆがシンプルだと、噛んだ時の香ばしさと甘みが分かりやすくて、麺のアップ写真（近距離のクローズアップ）を撮っても質感が伝わりやすいです。逆に大根おろし・かつお節・ねぎ・わかめ・青菜みたいに薬味が多いぶっかけは、食感の変化が楽しくて“満足感重視”のときにぴったり。 「備後矢野駅食堂」みたいに駅近でサクッと…を想像して行くと、ここは“丁寧な素材の店”という印象が強いと思います。無添加・化学調味料不使用をうたっているだけあって、味が濃すぎないのに物足りなくない。食べ終わった後に喉が渇きにくい感じがして、ランチ後の予定がある日でも体がラクでした。 混雑はしやすいですが、回転が早めなので、到着したら先に駐車場所を把握しておくと安心です。お店前が埋まっていたら、横の路地から入れる駐車場もチェック。営業時間は昼のみ（11:00-14:30）なので、遅めに行く場合はラストオーダーにも注意しました。 最後に、もしデザートがあったらぜひ。小さめサイズでも口がさっぱりして、うどんの余韻がきれいに締まる感じでした。次は釜揚げも食べて、麺のコシの違いを比べたいです。
