Super easy and fast dinner the whole family will love! Recipe written out below 😊
8oz or half a bag of wide egg noodles cooked
2 cans of cream of chicken soup
1 can of milk (I used one of the soup cans)
2 cups of shredded chicken
8 oz of shredded mild cheddar cheese divided
season to taste with garlic powder, onion powder, s+p, and chili powder (just a smidge of chili powder like 1/2 a teaspoon)
Add pasta, milk, soup, chicken, seasonings, and half of your cheese to a bowl and mix. Transfer to a greased 9×13 pan and bake at 350 for 25 minutes. After 25 minutes take it out and top with your remaining cheese. Put back in the oven another 5 minutes or until cheese on top is melty. This is also really good with some mixed veggies mixed in before baking!!
... Read moreI’ve made this cheesy chicken noodle casserole several times, and it’s always a hit with my family. What I love most about this recipe is how adaptable it is. For instance, when I want to add extra nutrition, I toss in some frozen mixed vegetables like peas, carrots, or corn before baking. It blends wonderfully with the creamy sauce and melted cheddar, making the dish more colorful and wholesome.
Another tip is to use leftover rotisserie chicken if you want to save time on shredding. It adds great flavor and texture without extra effort. I also recommend pre-cooking the egg noodles just until al dente so they don’t turn mushy during baking.
The seasoning balance—garlic powder, onion powder, salt, pepper, and a hint of chili powder—gives the casserole a subtle warmth and depth that’s really satisfying. Feel free to adjust the chili powder if you prefer less spice.
For a golden, crunchy top, sometimes I add a sprinkle of panko breadcrumbs mixed with a little melted butter on top of the cheese during the final few minutes of baking.
Overall, this casserole is super easy and comforting—a true weeknight lifesaver that combines familiar flavors the whole family can enjoy. It’s perfect when you want a hearty meal with minimal prep and cleanup. Give it a try and customize it to your taste. You might find it becoming a new favorite in your household too!
I’m going to have to try this one!
