This took me 7 years to perfect… and I’m not gatekeeping 🍪
Soft Chocolate Chunk Cookies
Chill Time: 1–2 hours (or overnight for best flavor)
Bake: 350°F for 12 minutes
Ingredients:
• 1 cup brown sugar
• 1/2 cup white sugar
• 1/2 cup unsalted butter, room temperature (if you use salted butter then do not add the salt)
• 1 egg, room temperature
• 1 tsp vanilla extract
• 1 1/4 cups flour (no sifting)
• 1 tsp salt
• 1/2 tsp baking soda (Arm & Hammer)
• 2 (4 oz) 60% Ghirardelli chocolate bars, chopped
• Optional: flaky sea salt
Instructions:
1. Start by chopping your chocolate into chunks and set aside.
2. Cream together the butter, brown sugar, and white sugar until smooth.
3. In a separate bowl, whisk together the egg and vanilla extract.
4. Add the egg mixture to the butter mixture and mix until just combined (don’t overmix).
5. In another bowl, mix flour, baking soda, and salt.
6. Gradually add dry ingredients into the wet mixture until a dough forms.
7. Fold in the chopped chocolate.
8. Wrap the dough tightly in plastic wrap and refrigerate.
• Minimum: 1–2 hours
• Best: overnight — the flavor gets deeper and way better
9. Preheat oven to 350°F.
10. Scoop 6 dough balls onto a baking sheet, slightly flatten each one.
11. Bake for 12 minutes or until edges are golden.
12. Sprinkle with flaky sea salt right after baking (optional).
I swear… letting the dough sit overnight changes everything. These come out soft in the center, crisp on the edges, and they never last long.
